Real Food, Real Fast: Mini Chicken Pot Pies

Goodbye Lazy Days, Hello Busy Days!

The lazy days of summer are officially over and we’re in the thick of the busy Fall season. Between working from home, driving the kids to the moon and back, running errands what feels like constantly and fulfilling school obligations (this crazy nut right here over-volunteered herself this year) I rarely have time to cook a full-blown homemade meal during the week. In an attempt to not give up on homemade meals I pulled together a little mom magic, creative thinking and internet research to help create this mini chicken pot pie recipe. This recipe is real food, real fast and perfect for eating on the go. Dinner has never been so easy! This is a sponsored post, all opinions are our own.

Homemade Takeout

Because Progresso has real, quality ingredients it’s always my first choice to help make a quick and delicious homemade meal. This mini chicken pot pie recipe is made with just two ingredients: Progresso Chicken Noodle Soup and biscuits, that’s it! Best yet is that this recipe is perfect for eating on the go. My kids have chowed down on these in the car on the way to baseball practice more than once. It’s a delicious recipe that leaves us full and satisfied – and that’s the best this mom could ask for!

Mini Chicken Pot Pie Recipe


Ingredients:
Traditional Progresso Chicken Noodle Soup
1 Can of Flaky Refrigerator Biscuits

Directions:
Preheat oven to 375 degrees. Separate 8 flaky refrigerator biscuits into two halves. Flatten with your palms or a rolling pin to an approximate 5″ circle. Spray your muffin tin with Pam thoroughly. Place one biscuit into each muffin cup. Drain broth from Progresso Chicken Noodle Soup and store for another day. Place 2 tablespoons of Progresso Chicken Noodle Soup into each biscuit cup. Use another biscuit to cover, sealing the edges as much as possible. Brush tops of biscuits with butter. Place in oven and bake for 14-16 minutes. Enjoy!

I can’t rave about this recipe enough. It’s such a good hearty and delicious meal that is perfect for a busy weekday evening. I have stocked up on Progresso to create even more delicious homemade meals for the busy school year. I highly suggest you guys stock up on Progresso from Walmart too!
