Quick Chicken Parmesan Recipe

Let’s face it, attempting to get a nutritious and quick dinner on the table during the school and work week is a struggle. Between homework, sports, errands and daily chores it’s nearly impossible some days. That is why I rely on a few go-to better for you meal options that I know my family loves and takes very little time to prepare and cook. This quick chicken Parmesan recipe not only lives up to it’s name for being fast, it’s also insanely delicious.

Nothing helps speed up the dinner rush than a well stocked pantry and there is no better time to stock up than during the “Better for You Brand Sale” at Sprouts Farmers Market. Having four young children at home that always seem to be hungry, I have learned to always keep a well stocked food pantry. However, having just anything in my food pantry just won’t do. I like to offer my kids food options that are better for them. I mean, I try anyway. Of course we have a few junk food items as well, they are kids after all. But I can honestly say that I maintain a pretty radical nutritious food pantry full of a variety Annie’s Organic pastas for quick after school snacks before baseball practice.

Our best advice for quick better for you family meals during the busy work and school week is to have really great products on hand for fast meals. Quick Chicken Parmesan Recipe

This recipe is surprisingly quick to prepare and to cook. By using chicken tenders instead of large chicken breasts, cooking time is reduced extensively. Depending on the amount of time we have to cook dinner, I will alter the ingredients to fit the time schedule. For example: if I have more time, I’ll cook fresh green beans. If I have less time, I’ll cook Cascadian Farms Organic frozen broccoli.

Ingredients
Chicken Tenders
Muir Glen Organic Tomato Basil Sauce
Mozzerella Cheese (we used whole milk mozerella cheese for an extra ooey gooey melty goodness)
Rotini Pasta (you may use whatever kind of pasta you have on hand)
Cherry tomatoes – cut in half
Shaved Parmesan
Fresh Cracked Pepper
Garlic Seasoning
Olive Oil

Directions
Season both sides of the chicken tenders with fresh cracked pepper and garlic powder seasoning. If you have more time, you can chop up fresh garlic for a stronger garlic flavor instead. Add approximately 3 tablespoons of olive oil to your frying pan on medium high heat. Add chicken and cook on each side until golden brown, pushing down on chicken just a bit to flatten (cooking should take approximately 5 minutes on each side).

While the chicken is cooking, cook pasta according to package directions. Drain and set aside. Also cook your vegetable side dish. We chose to make fresh green beans. Lining up the green beans and cutting off the tips all at once saves a lot of time. Cook the green beans in hot boiling water for approximately 7 minutes.

Once the chicken is thoroughly cooked, add several tablespoons of Muir Glen Organic Tomato Basil Sauce on top of each chicken tender. Cook for 3-4 more minutes. Toss in your halved cherry tomatoes into the pan. Lastly, cut your mozzarella cheese into 1/4″ thick strips and place on top of each chicken tender. Cover frying pan with lid and allow cheese to melt (approximately 90 seconds). Remove lid, sprinkle with shaved Parmesan and serve hot.
