Sweet and Savory with Mountain High Yoghurt

March 27, 2012 By Desiree Eaglin

Did you know that substituting yogurt in your everyday recipes not only adds nutrition such as calcium and protein but also reduces unwanted fat calories? Plain Mountain High Yoghurt is the perfect substitution for fatty foods such as mayonnaise and cream cheese in savory recipes such as dips and casseroles. Vanilla Mountain High Yoghurt is the perfect substitution for whipped cream in sweet recipes like cakes and puddings. I was interested in trying these substitutions out so I made two dishes, one sweet and one savory. Not only were these recipes absolutely delicious my family loved them too!

Sweet Recipe – Mountain High Yoghurt Parfait

Ingredients needed:
Vanilla Mountain High Yoghurt
Strawberries-sliced
Blueberries
Granola

Directions: I used a sundae dish for my yogurt parfait. Put a few healthy dollops of MHY on the bottom of the dish. Add a layer of sliced strawberries, blueberries and granola. Add a few more healthy dollops of MHY. Add another layer of sliced strawberries, blueberries and granola. Enjoy!

My husband and my children went nuts over the MHY parfaits. I was slicing strawberries and creating parfaits faster than superwoman to feed their hungry appetites!

Savory Recipe – Mountain High Yoghurt Spinach Dip

Ingredients needed:
1 ½ cups Plain Mountain High Yoghurt
¼ cup Light Mayonnaise
¼ cup Light Sour Cream
1 – 10oz frozen spinach package. Thawed and squeezed dry* (*place thawed spinach in a towel, squeeze towel until all extra juice is expelled)
1 teaspoon minced garlic
Salt and Pepper to taste
Chili Powder to taste

Directions: Combine MHY, sour cream, mayonnaise and spinach in medium bowl. Add garlic, chili powder, salt and pepper. Cover and chill in the refrigerator for at least 2 hours. Serve with crisp vegetables such as bell peppers, crackers or bread.

I was super interested in the health benefits of substituting Mountain High Yoghurt in this recipe. I adapted the Mountain High Yoghurt Spinach dip recipe found on their website to include chili powder instead of nutmeg; I like my dips to include a bit of bite. Let me tell you guys, this spinach dip was sooo good and healthy! I ate my dip with large chunks of sourdough bread, YUM!

Now it is your turn! What is your favorite Mountain High Yoghurt recipe?

I participated in a campaign on behalf of Mom Central Consulting  for Mountain High Yoghurt. I received a gift card to purchase yogurt, a product kit, and a promotional item to thank me for participating.” All opinions are my own.
